Cinnamon Swirl Protein Pancakes

INGREDIENTS:

Pancake Batter
1 cup Krusteaz Protein Pancake Mix
2/3 cup milk (can substitute water)

Cinnamon Swirl
1/4 cup avocado oil (can substitute melted coconut oil)
1/4 cup coconut sugar (can substitute brown sugar)
1 tablespoon ground cinnamon

Maple Cinnamon Whipped Cream
-2 cups heavy whipping cream
-4 tablespoons sugar
-1 tablespoon ground cinnamon
-1 tablespoon maple syrup
(Add ingredients to a chilled bowl and mix with a hand mixer until a whipped cream forms)

STEPS:

STEPS:
-In a bowl, combine your pancake mix and milk to form a batter
-In a separate bowl, combine your coconut sugar, avocado oil and cinnamon to form your cinnamon swirl mix. Add to a squeeze bottle, piping bag or plastic bag (with the corner cut)
-Add some coconut oil or butter to an electric griddle (375F) or pan (medium-high heat)
-Add your batter to the griddle/pan; then add your cinnamon swirl on top
-Cook for approx. 75 seconds and flip. Cook for another 75 seconds
-Layer with whipped cream (recipe above) and top with a little bit of maple syrup
-Enjoy!
